What’s not to love about eggs? They have 11 essential vitamins and minerals, including phosphorus, folate, vitamin A and vitamin B12. Eggs can help you to feel fuller for longer, so they’re great for breakfast or pretty much any meal. Or as a quick snack!

They are one of my favorite natural protein foods because they’re cheap to buy and you can use them SO MANY ways!

Get ready to learn how to make eggs just the way you like them!

Soft Boiled & Hard Boiled

HOW DO YOU LIKE YOUR EGGS?

You will need:

  • 1-2 eggs
  • 500ml water (enough so it covers 2cm above your eggs)

Method:

  1. Place the eggs in a saucepan and fill with cold water until it covers the egg by 2cm. Bring the water to the boil over high heat, uncovered. Once boiling, cover with a lid and reduce the heat to medium-low.
  2. Simmer the eggs for 3-4 minutes for soft-boiled.
    1. For semi-firm yolks and hard whites, simmer for 5-6 minutes.
    2. For hard-boiled, simmer for 7-8 minutes.
    3. Use a slotted spoon to remove the egg from the water. Transfer to an egg cup for dippy eggs or crack open shell for hard boiled.

You can hard boil a few eggs at a time and use them as a quick snack, or you can slice them up and use as toast toppers!

Poached

HOW DO YOU LIKE YOUR EGGS?

Method:

  1. Fill a large saucepan with water until 8cm deep. Add a splash of vinegar and bring to the boil over a medium heat before reducing heat to a simmer.
  2. Break the egg into the water and cook for 2-3 minutes for a semi-soft yolk or 3-4 minutes for a firm yolk. Remove the egg from the water using a slotted spoon.

I like mine firm, but I hear once you get over the icky feeling of a softer yolk, you can’t go back.

Scrambled

HOW DO YOU LIKE YOUR EGGS?

Method:

  1. Beat the eggs, water, salt and pepper together in a bowl.
  2. Heat a non-stick frypan over medium heat. When the pan is hot, pour in the egg mixture.
  3. As eggs begin to set, gently push the eggs across the pan with a wooden spoon to form large folds. Ensure that you push the mixture from different directions and include the mixture from around the edge of the pan. Do not stir constantly. Continue to cook the eggs until no visible liquid egg remains and remove from the heat.

Fried “Sunny Side Up”

HOW DO YOU LIKE YOUR EGGS?

Method:

  1. Heat a non-stick fry pan over medium heat and spray lightly with oil spray. Gently crack the egg(s) into the pan.
  2. Cook for 2-3 minutes, until the top of the whites are set but the yolks are still runny.
  3. When the eggs are cooked to your liking, carefully remove the eggs from the pan using a spatula.

Trust me on this: one of the easiest dinners you’ll ever make is roast vegetables with a fried egg on top! You can also make a delicious ratatouille to have with rye bread and a soft-in-the-middle fried egg just the way my wife likes it.

Over Easy

HOW DO YOU LIKE YOUR EGGS?

Method:

  1. Heat a non-stick fry pan over medium heat and spray lightly with oil spray. Gently crack the egg(s) into the pan.
  2. Cook for 2-3 minutes until the top of the whites are set but the yolks are still runny.
  3. Carefully flip the eggs over using a spatula and cook for a further 1-2 minutes. The yolk will still be a little runny so cook for another minute if you like the yolk cooked a little more.
  4. When the eggs are cooked to your liking, carefully remove the eggs from the pan using a spatula.

If you like your eggs a tiny bit firmer, over easy eggs are perfect. The hard part can be flipping them without breaking the yolk! Just remember, a good spatula can make all the difference!
